Roasted Rhubarb

The rhubarb is doing really well at the moment so here’s a recipe to tempt those who like

it!

Ingredients

10-12 rhubarb stalks

1 cup sugar (or less/more to taste)

1 orange

Method

1. Wash rhubarb and cut into small 10 cm segments and place in a bowl

2. Add the peel of the orange to rhubarb

3. Juice orange and add to rhubarb

4. Add sugar, mix through rhubarb, cover and leave overnight

5. Arrange rhubarb segments on an oven tray and place orange peel and juice/sugar

mixture on top

6. Place in pre-heated oven – 150C – for 30 mins or until soft

7. Serve with cream/ice-cream or use to make rhubarb crumble
